What does Ana Roš think about Michelin in Slovenia?

Ana Roš is the amazing chef of Hiša Franko, who has turned a traditional country inn that Valter’s parents used to run into a world-class fine dining restaurant and guesthouse that is helping put Slovenia on the world culinary map.

Today we asked Ana Roš what she thinks about the arrival of the Michelin Guide to Slovenia.

Ana Roš is without a doubt the most recognizable Slovenian chef in the world. Ana Roš is a self-taught cook who made the list of The World’s 50 Best Restaurants. You probably know her from the 2016s Netflix series “Chef’s Table”, where they highlighted how she redefined Slovenian cuisine at Hiša Franko. Her cooking philosophy is “the kitchen is a symbiosis of 3 elements: the territory, the season and the personality of the chef”. Ana Roš sees cooking a lot like painting – and if you take away her colors, she has nothing to paint with.

THE: What do you think about the arrival of the Michelin guide to Slovenia?

Ana Roš: “We are excited about the arrival of the Michelin Guide to Slovenia. We consider the arrival of the Michelin Guide to Slovenia as urgently necessary.”

THE: What kind of an impact will the Michelin Guide have for Slovenian gastronomy?

Ana Roš: “I think it’s “carrot-stick” (which is metaphorically speaking the use of a combination of reward and punishment to induce a desired behavior). I personally think the arrival of the Michelin will bring a lot of excitement or happiness on one hand, and on the other fear or awe if you will, with the arrival of this giant.”
