After more than 25 years in the business, JB is firmly entrenched as one of the best restaurants in Slovenia – and one of the top 100 in the world in 2010 – with this fine-dining experience coming courtesy of founder and multiple award-winning head chef, Janez Bratovž.

Today we asked Janez Bratovž what he thinks about the arrival of the Michelin Guide to Slovenia.

Janez Bratovž, the culinary legend, and name behind the eponymous JB Restavracja in Ljubljana is the undisputed godfather of Slovenia’s modern culinary resurgence, and we don’t mean that in the Vito Corleone sense of the term.

THE: What do you think about the arrival of the Michelin guide to Slovenia and what will it mean for the Slovenian restaurants that will become the recipients of Michelin star(s)?

Janez Bratovž: “The arrival of Michelin guide for restaurants that will receive the (Michelin) stars will probably mean a lot to them, as they have strived towards maintaining a high standard before. This will become a conformation that they are on the right track. Certainly, this will also grab the attention of the media, and the restaurants, which will receive the Michelin stars will become (even) more exposed. To every chef, the (Michelin) star means a lot.

THE: What kind of an impact will the Michelin Guide have for Slovenian gastronomy?

Janez Bratovž: “For the development of Slovenian gastronomy this will only be positive, as we will continue to strive for more, and it will be also very positive as Slovenia will be the gastronomic capital of Europe in 2021.”

We would like to thank Janez Bratovž for taking the time out of his busy schedule to talk to us!
