In the heart of Goriška Brda, in Dobrovo, one of Slovenia’s most recognizable stories of Rebula, sparkling wines and family tradition is being created. Medot is not just a wine cellar, but a continuation of the vision of Zvonimir Simčič, who became known as the “father of Rebula” because of his dedication to this variety. His work had an important influence on the development of Brda, the preservation of Rebula and the region’s path toward becoming one of the most interesting white wine landscapes. At Medot, they say that every bottle brings together tradition, nature and passion, while the beginning of their story is simply nature — and its richness, opoka.

A story passed down through generations

The winemaking tradition of the Simčič family at the Medot estate dates back to 1812, when Goriška Brda was a poor agricultural region and people made their living mainly from wine, fruit and hard work. A special place in this story belongs to Zvonimir Simčič, who, after studying at one of the most prestigious oenology schools in Italy, brought a new perspective on the long-term potential of Brda. Thanks to his contribution to the preservation and widespread planting of the Rebula variety, he received the title “father of Rebula” and also became an honorary citizen of Brda. After retiring, he devoted his energy to creating the first serious classical-method sparkling wine based on Rebula, one that could stand alongside Champagne. This is how Medot was born.

Rebula as the heart of the identity

The uniqueness of the Brda terroir is most clearly reflected in the indigenous Rebula variety, which has earned its place among the world’s finest white wines. The modern story of Rebula is closely connected to the story of Medot, especially through Zvonimir Simčič, one of the key figures who helped Rebula gain new life and modern recognition. At Medot, now led by his grandson Simon Simčič, this legacy continues through still wines such as Rebula Journey and Rebula Golden Époque, as well as through classical-method sparkling wines, where they focus on elegance, harmony and loyalty to Rebula.

Sparkling wines made using the classical method

Medot’s specialty is sparkling wines made using the classical method, characterized by longer ageing in the bottle and recognizable complex flavours with silky, elegant bubbles. Their story is based on the pioneering development of Rebula-based sparkling wines, which Zvonimir Simčič began experimenting with in the 1980s. In their sparkling wines, they use a blend of Rebula, Chardonnay and Pinot Noir. Rebula contributes minerality, higher acidity and finesse, Chardonnay brings elegance and roundness, while Pinot Noir adds structure, backbone and a fruity character. Their current sparkling wine range includes Medot Brut 48, Medot Brut Rosé, Medot Extra-Brut, Medot Millésime and the special edition Medot Solera.

The Medot experience in Brda

A visit to the Medot cellar is designed as a guided wine journey. During tastings, guests are taken through the cellar and introduced to the secrets of wine and sparkling wine production using the classical method, the history of winemaking in Brda and the family story of Zvonimir Simčič. The tasting also includes local cured meats and cheeses, and visits are available by prior reservation. At the Medot estate, they can also organize private events, team buildings, receptions or gala dinners with wine pairings for private groups.
