Serenity Among the Vines
In the northwestern corner of Croatia’s Istrian peninsula, just minutes from the coast yet far from its busy tourist trails, lies the small village of Bužinija. Here, on a gentle hillside with sweeping views, you’ll find Fiore Winery – a place where tradition meets modern expertise, and every vintage reflects both the land and the people devoted to it.
A Family Legacy
The winery is led by Andrej Paulić, the second generation of his family to craft wines here. Trained as an ethnologist, Andrej’s passion for wine took him to Italy, where he worked in prestigious regions such as Friuli and Chianti Classico. Today, he blends that experience with Istrian heritage, creating wines that respect the past while embracing the future.
Quality Over Quantity
Fiore cultivates around 20 hectares of vineyards, 80% planted with Istrian Malvasia. The rest is dedicated to Refošk, Merlot, Cabernet Franc, and a few other varieties. Since 2013, they have produced wine exclusively from their own grapes – nothing is sold off.
Harvest is always done by hand, not only to ensure quality but also as a gesture of respect toward the vines. For wines intended for maceration or extended aging, this careful selection is essential.
Malvasia with Character
If one wine defines Fiore, it’s their Malvasia. The fresh style offers aromas of white flowers, citrus zest, and a subtle minerality. The macerated versions bring amber hues, depth, and a tannic structure reminiscent of fine orange wines.
They also produce Campo, a sparkling wine made using the charmat method, which delights with crisp flavors and refreshing bubbles – perfect for warm summer days.
Awards That Reflect Dedication
Though awards aren’t the ultimate goal, Fiore has earned numerous medals in recent years – golds for Malvasia at both national and international competitions, as well as silver and bronze for other varieties. For Andrej and his team, each recognition is proof that staying true to their principles pays off.
A Visitor Experience
Fiore is more than a place to buy a bottle. Visitors are welcomed onto a terrace overlooking the vineyards, invited to hear the stories behind the wines, and offered tastings right where the magic happens. It’s an experience that engages all senses – something no photograph can fully capture.
