Roundly regarded by gourmands, amateur foodies, tourists and locals alike as one of the best restaurants in the country, and currently ranked as the 38th best restaurant in the world, it’s not uncommon for diners to make the trip to Slovenia for the express purpose of eating here. Run by a husband and wife team, Ana Roš, who has been hailed as one of the best female chefs in the world, is in charge of the kitchen, while Valter Kramar’s knowledge of Slovenian wines and cheeses is unrivaled.


Set in a rustic villa outside the town of Kobarid in the far west of the country, a meal here is in high demand, with reservations being mandatory (and the further in advance the better). The jaw-droppingly impressive and exceptionally Instagram-friendly tasting menu features dishes that change with the seasons, or as a stroke of genius hits Roš. All of the produce used is grown or foraged around the estate, and behind the main house is a huge garden, complete with a babbling creek running beside it.


With a history that’s nearly as rich as the dishes Roš prepares, it’s not difficult to see why the Hiša Franko estate building is a popular destination in its own right. Over the building’s lifetime, it has been a village mill, an inn and a hospital during the First World War - the breathtaking Soča Valley region is steeped in history, and definitely worth a longer stay.
