Many places may claim the old \u2018traditional food with a modern<br>\ntwist\u2019, but Gri\u010d certainly delivers on that promise. It all starts with Luka<br>\nKo\u0161ir, one of the best young chefs in Slovenia, who earned his stripes<br>\nunder the mentorship of the famed Janez Bratov\u017e at JB Restaurant.<br>\nEverything used in their dishes is sourced locally, and the kitchen has<br>\na strict zero waste philosophy, which is made easier by Luka&#8217;s novel<br>\ntechniques of fermentation.
