It spreads awareness on the global impacts of food and brings together the world&#8217;s top chefs and extraordinary individuals from the culinary, arts and media fields. I wish this summit would inspire each individual to think\nabout how he can create a better future and give them concrete solutions on how\ntheir actions can change their attitude towards food\u201d, <\/em>explains <strong>Martin\nJezer\u0161ek, event organizer and Managing Director at Jezer\u0161ek gostinstvo d.o.o.<\/strong><\/p><p>The fact that the\nEuropean Food Summit is crucial both in creating a sustainable future for\nEurope as in the development of Slovenian gastronomy is emphasized also by <strong>Maja\nPak, M.A.,<\/strong> <strong>Director of Slovenian Tourist Board (STB<em>)<\/em><\/strong><em>:\n\u201cSlovenian tourism has come to the conclusion that the only right way to development\nis sustainability. This is demonstrated, among other things, by the Green\nScheme of Slovenian Tourism, the national program and the certification scheme,\nwhich has just welcomed its 100<sup>th<\/sup> bearer of the Slovenia Green\nlabel. We would also like to extend the scheme to the field of gastronomy, since\nit is an important factor in shaping a quality present and future for ourselves\nthrough its daily impact on the health of the environment and humans, and the\ncreation of various synergies. This is also one of the main topics of the\nproject Slovenia &#8211; European Gastronomic Region of 2021, supported by over 60\ndifferent partners. Our gastronomic excellence is also evidenced by the arrival\nof world-renowned guides Michelin and Gault&amp;Millau. It is important that we\nshow the world our excellent sustainable practices in gastronomy in different\nways, and the European Food Summit, in which STB is participating, is an effective\nway of promoting them in a targeted and strategic way. <strong>Vladimir Mukhin<\/strong>, one of the\nmost influential Russian chefs, who delved into old recipes and set up a new\nRussian cuisine; <strong>Nicolai N\u00f8rregaard<\/strong>, one of the first pioneers and\nambassadors of the Nordic cuisine movement, as well as <strong>Colombe Saint-Pierre<\/strong>,\none of Canada&#8217;s most recognized chefs; Brazilian chef of German-Japanese roots <strong>Alberto\nLandgraf,<\/strong> who is creating his success story with one of the best\nrestaurants in Rio de Janeiro these days; <strong>Keti Berishvili<\/strong>, a Georgian\nwinemaker who, with every single drop of wine produced according to the ancient\nmethod in amphorae buried in the ground, proves to belong at the very top; winemaker\n<strong>Sylvie Augereau<\/strong>, the champion of the French natural wine revolution; a world-renowned\nart critic, <strong>Nicolas Bourriaud<\/strong>, who has proven that culinary is an art,\nby bringing together renowned artists and top chefs. Also, Canadian journalist, writer and activist <strong>Marie-Claude\nLortie<\/strong>, who in her latest book emphasizes the importance of supporting\nlocal and natural or organic agriculture. <strong>Maria Canabal<\/strong>, an\naward-winning French journalist, founder and president of the Parabere Forum,\nwhere women are primarily given the voice, and crowned with the title of the most\ninfluential woman in gastronomy. In addition, <strong>John Lanchester<\/strong>, one of\nthe most prominent British writers and one of the most unique and non-classical\nculinary writers. <strong>Lisa Abend<\/strong>, an American journalist and writer who has\neven been awarded for her contribution to what a circus gastronomy has become,\nand <strong>Nicolas Gill<\/strong>, a photographer exploring the boundaries and\npossibilities of American cuisine.
